30 Recipes ~ 2 1/2 Day - Part 3

This is the last of the highlights from the Healthy Cuisine For Kids Class. If you missed Part 1 & 2 - You can find Veggies here and Meats here.


Asian Sesame Noodle Salad made with whole grain pasta. This one had some kick to it...I think there was a bit of measuring issues with the red pepper flakes, actually.



This dough is amazing. It is a yeast dough that is thick and pourable. It can be used to make pizza crust, or baked into focaccia bread. This one was made with half whole wheat flour, with herbs and garlic granules added to the dough and topped with olive oil and low fat mozzarella cheese. It is so delish that I make this one at home.



Tabouleh salad is my favorite! The flavor combination is fabulous! I find this does not go over well with the majority of students at my school when offered as a choice with the main meal, but it is a huge hit with my vegetarian eaters who frequent the salad bar.



These whole wheat sugar cookies are the bomb! The wheat flour lends a nutty flavor and if you get the right type of wheat flour where you find bits of the grain you can deceive everyone to think there are nuts in the cookies. I'm not a fan of nutmeg, but I can tolerate it in these cookies.

FYI - The Culinary Institute of America writes, reviews, and updates the recipes that the USDA gives all schools as standardized recipes. All of the recipes I have featured between the three blog posts are available to every school that participates in the National School Lunch Program.

It's melting....

Yeah!!! I was so excited when I pulled in my drive this afternoon and (gasp) saw the wooden border for my perennial flower beds! They only stand about 6 inches high, but we haven't seen them since...November, December??? The massive doses of sunshine and warmer air this week has greatly reduced the amount of snow we have in our yard. Admittedly, we still have a great deal of snow in our yard but every day we are seeing more of the yard and less of the snow. YEAH!!!! I didn't have time to snap a photo so you'll just have to trust me on this one..I was too busy taking in every last waking moment of the sun and warm air while it was there to be enjoyed.

Our grill has been working double overtime every day since last weekend. We never tire of grilled food around our house...as Rachael Ray would say it...YUM-O!!! Tonight we had BBQ Ribs that were to die for. OK, they could have been tough as a buzzard and we wouldn't have cared! LOL

22nd Anniversary

It is a busy weekend with Easter and all...throw in our 22nd Wedding Anniversary and you have the makings for a very busy weekend. We have aged gracefully, have two teenagers almost ready to make the jump into adulthood, and one child that has already crossed out of the teen years. With 22 years of experiences (some good, some bad) to reflect upon, our love still rings true and is the driving force of our marriage.

For the occasion, we took a little ride to Hanover, New Hampshire to check out this fabulous restaurant, Jesse's. The rustic appearance of the place was so cozy and inviting, the staff equally pleasant. They have the most incredible salad bar loaded with fresh baby greens, vegetables, and salads. Much of what they stock on the salad bar is locally grown or handmade in house. Awesome, awesome!!! We were in pursuit of a good steak, and Jesse's delivered along with their signature steak sauce that is outstanding...and this chick is a die hard A-1 Steak Sauce kinda girl! The Turtle Cheesecake was so tempting, so we caved in on a rare occasion to indulge ourselves with dessert. Curiosity got the better of me...Green Tulip Martini? Not bad, catchy name, lured me right in! LOL I would suggest if you are ever in Hanover, NH and want to check out Jesse's, to call ahead to make reservations. The place is happening and busy.
