Some food highlights from the Healthy Cuisine For Kids class this past week.

And I should also mention that presentation and eye appeal was key part of this entire course. The garnishing and presentation was part of the critique process. We shop with our eyes first. At school I can have the menu posted but the kids still have to see the food before they will decide if it is hot lunch or salad bar for them.

This reminds me, the current issue of Eating Well magazine - Jul/Aug '08 (which I didn't realize is published in VT) - mentions many farms and innovative food ideas from VT. Pretty cool!
